I love cooking and I love creating meals that are experiences – tastes, smells, plated beautifully, playful table settings, a signature drink, etc. Obviously, with a busy schedule and hectic family life, these experiences are reserved for special occasions.
But I still want to feed my family healthy meals. And if you’re like me, you want your kids to be willing to taste and explore new flavors. You rather not order takeout every single night of the week. You definitely don’t want to resort to eating the same thing day after day after day. And you definitely don’t have a lot of time to spend in the kitchen (and the grocery store) every day.
Over the years I’ve aggregated some of my favorite recipes, modified them to our tastes, and simplified them to fit our busy schedules and health(ish) eating preferences.
I’m excited to share with you this growing collection of my family’s favorite dishes. These are recipes that routinely get thumbs up from the kids, and everyone is excited to eat. These dishes are never full of flavor (but not too spicy) and include simple and fresh ingredients that are easy to find and stock up on at home (in other words, if you start keeping certain staples at home, they will require little to no advance planning).
Finally, I’d like to introduce you to my best friend (in the kitchen) – the Instant Pot. My second best friend is my air fryer. These two make pulling dinner together super quick, easy, and (mostly) healthy (and cleaning up is a breeze too).
Full disclosure – when I search for recipes online, I HATE the long articles you need to scroll through to get to the actual recipe, and I get frustrated with recipe printouts that are filled with ads, odd fonts, and print on multiple pages. My promise to you is straightforward recipe pages and neat printouts.
