My kids love oatmeal. Daddy makes some really great slow-cooked oatmeal (or so they say – I’m just not a fan of oatmeal 🤫. I am ALL about the cereal 😉). Anyhow. we all know we don’t have the time to stand in front of the stovetop for 30min in the morning to pull it off. Insert Instant Pot here. My favorite small kitchen appliance/magician tool.

And turns out, my kids love my simple-and-quick Instant Pot oatmeal (almost) as much as daddy’s!  It’s a win-win all around.

I stick to this standard recipe. Most days they will eat almost all of it. Sometimes they’re good with just a small bowl each. I hated throwing away so many leftovers.
(side note: NEVER RINSE OATMEAL DOWN THE DRAIN. It will clog your pipes).

So I found this great recipe for leftover oatmeal muffins from theblackpeppercorn.com. And even though I personally don’t love oatmeal, I love these muffins.

 

 

A FEW NOTES ABOUT THE LEFTOVER OATMEAL MUFFINS: 

  1. If you (or your fellow humans) aren’t fans of raisins, you can easily swap them for 3/4 cup chocolate chips (and one tsp of vanilla) and have a delicious oatmeal chocolate chip treat!
  2. These little guys don’t turn golden like your typical muffin. if you sprinkle some oil and a mixture of sugar and cinnamon with the oats, you’ll get that nice golden finish.
  3. They are SUPER dense. so I’ve discovered I like the mini muffin size. These are my favorite silicone molds (no need to grease them! They just pop out!)
  4. 1.5 cups of leftover oatmeal yields about 24 mini muffins (or squares). I keep a few out fresh for the day and freeze the rest. When you’re ready, drop them in the toaster oven for a few minutes and enjoy warm and fresh.
  5. If you end up with less than 1.5 cups of leftover oatmeal, cut the recipe in half, and enjoy 12 mini muffins instead of 24.

But first – Oatmeal! This recipe takes about 23 minutes, but you can walk away after the first 3 minutes and come back when it’s ready. Perfect for a busy morning!

Super-Quick and Super-Easy Instant Pot Oatmeal

A super quick and filling way to get your oatmeal fix on a busy morning!

  • Cooking Oil Spray
  • 3 tbsp butter
  • 1 cup steel-cut oats
  • 2 1/2 cups milk
  • 1/4 tsp salt
  • 1 tbsp brown sugar + extra per serving
  1. Lightly spray the bottom 1/3 of the pot with your cooking spray (this will prevent any oatmeal from sticking to the bottom of the pot)

  2. Preheat the Instant Pot (hit the Saute button), and add the butter. Cutting the butter into smaller pieces will help it melt faster. Add the oats and stir. Let the butter fully melt and cook the oats for about 2 minutes.

  3. Add the milk, salt and sugar and mix well. Secure the lid, and make sure the steam release seal is set to 'sealing'

  4. Select the 'Manual' setting and cook on high pressure for 7 minutes (this will take a few minutes longer because it takes a few minutes for the pot to build up and lock up the steam inside it).

  5. The pot will beep and start a countdown for a natural release. Let it stand for 10 minutes. Then release any pressure with a quick release. The oatmeal will continue to thicken and cook.

  6. Serve hot. Sprinkle additional brown sugar, and add any toppings you might like (chopped nuts, berries, chocolate chips, coconut flakes…) enjoy!

WHAT TO DO WITH YOUR LEFTOVERS? 

  1. DO NOT pour them down the drain. Oatmeal is super dense and will clog your pipes. Yikes!
